Stuffed Mushrooms
Ingredients
*I usually double the recipe
Stuffing:
  • 1/3 cup seasoned (Italian style) breadcrumbs
  • 1/4 cup canned minced clams, drained
  • 2 Tbsp. minced red bell pepper
  • 1 Tbsp. shredded Parmesan cheese
  • 1 Tbsp. shredded Romano cheese
  • ½ tsp. minced garlic
  • 3 Tbsp. chicken broth
  • 12 medium white button mushrooms with stems removed
  • 3 Tbsp. butter, melted
  • 1 cup shredded mozzarella cheese

Directions

Preheat oven to 450ºF. 

Combine breadcrumbs, clams, red bell pepper, Parmesan cheese, Romano cheese, and garlic in a medium bowl.  Add the chicken broth 1 Tbsp. at a time and stir after each addition.  Keep the stuffing fluffy by not over stirring.

Fill each of the mushroom caps with the stuffing.  Arrange the stuffed mushrooms in a shallow baking dish.

Use a brush to dab melted butter over each mushroom. Pour any leftover butter into the dish.

Sprinkle the shredded mozzarella cheese over the mushrooms. 

Bake the mushrooms for 12-15 minutes or until the cheese is golden brown.
