- 4 to 5 large potatoes, peeled and sliced
- 1 large onion, sliced
- 8 ounces cheese loaf (Velveeta), cut into 2 inch cubes
- 2 tablespoons butter or margarine
- 1/2 cup milk
- 1/4 cup heavy whipping cream*
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon garlic powder
1. Place the potatoes and onion in a large saucepan; cover with water and heat to boiling over medium-high heat. Continue cooking until the potatoes are tender. Drain and pour into a 2 quart casserole dish.
2. In a small saucepan, combine cheese, butter or margarine, milk, cream, salt, pepper and garlic powder. Place saucepan over medium-low heat and stir constantly until cheese is melted and smooth. Pour cheese mixture over potatoes and onions in casserole dish. Stir to blend well.
3. Bake in 350°F oven for 15 to 20 minutes or until bubbly. Makes 6 servings.
* You may omit the heavy whipping cream, if desired, and increase milk to 3/4 cup.
