I usually double this recipe.
Biscuits:
Ingredients
- 2 cups flour
- 3 tsp. baking powder
- 1 tsp. salt
- ¼ cup (half a stick) butter
- 1 cup milk
Directions
Mix flour baking powder and salt together. Cut in butter. Add milk and mix well. Flatten out with hands onto a lightly floured surface to ½ inch thickness. Cut into biscuits. Bake at 450° for 10-12 minutes or until golden brown on top.
Gravy:
Ingredients
- 1lb. ground pork sausage
- ¼ cup flour
- 3 cups whole milk or Half & Half
- Salt and pepper to taste
Instructions
In a large cast iron skillet, brown sausage, stirring until it crumbles and is no longer pink. Drain. Reserve 1 tablespoon of sausage drippings.
Return sausage and reserved drippings to skillet. Over medium heat, sprinkle flour over sausage, stirring constantly until mixture turns a warm brown.
Gradually whisk the milk into the skillet. Sausage mixture will begin to bubble and thicken. Salt and pepper to taste. Reduce heat and simmer for about 15 minutes. If it becomes too thick, add additional milk. Serve over hot biscuits.
