Coleslaw

(I usually halve the recipe and it fills a big serving bowl.)

Ingredients:
  • ¼ cup plus 2½ Tbsp. vegetable oil
  • ½ cup minced onion
  • 1 cup sugar
  • 4½ tsp. tarragon vinegar
  • 2½ cups Miracle Whip
  • 2 carrots, finely chopped
  • 2 heads cabbage, finely shredded
Directions:

Prepare the slaw dressing by combining the oil, onion, sugar, vinegar, and Miracle Whip, whisking briskly to thoroughly blend all of the ingredients.  Refrigerate in a covered container until ready to use.

Shred the carrots and cabbage in a food processor.

Toss together the carrots and cabbage, then fold in the dressing, combining well.  Cover and refrigerate overnight.  Drain a little of the accumulated liquid before serving.
