Blackberry Buckle

Serves Ten

Ingredients
  • 2 cups sugar
  • 1/3 cup butter, softened
  • 2 cups all-purpose flour, sifted
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1 cup milk
  • 3 cups blackberries (fresh or frozen)
  • 2 cups boiling water
  • Whipping cream or heavy cream

Directions

Preheat oven to 350ºF.

Using an electric mixer, cream together 1 cup of sugar and the butter.

Stir together flour, baking powder and salt.  Add flour mixture and milk to creamed butter and sugar mixture.  Mix well.

Pour batter into a 13x9 pan.

Pour blackberries over the batter.  Pour remaining 1 cup of sugar over blackberries.

Pour boiling water over the blackberries and batter.

Bake for 45-50 minutes or until golden brown.  Serve hot or cold with dollops of whipped cream.
